Model 590/592 2-4. HIGH TEMPERATURE This high temperature control is a safety, manual reset control, LIMIT CONTROL which senses the temperature of the shortening. If the shorten- ing temperature exceeds 425°F (218°C), this switch opens and shuts off the heat to the frypot. If the pressure pad is worn, but not broken, it can be reversed 180 degrees, and the other end of the pad used. See Pressure Pad Section.
