Turning the Fryer On CAUTION: Before turning burners on, fry tank must be filled with liquid shortening. If this is not done, the tank walls can be damaged. Warpage can cause leaks. To turn the fryer ON, set the thermostat knob to the desired temperature. When the set temperature is reached, the gas control shuts off gas flow into the burners and the flame is extinguished.
