Press to enter the program mode and scroll through the parameters. If the Parameter Lock feature is disabled, program mode is immediate. DRAIN INTERLOCK Prevents the heating elements from operating when the drain valve is open. SHORTENING LIFE Shortening life may be extended by following these guidelines: • Do not salt foods over the fryer. • Use good quality shortening. • Filter shortening daily at a minimum. • Replace shortening if it becomes poorly flavored. • Keep equipment and surroundings clean. • Set thermostats correctly. • Remove excess moisture and particles from food products before placing in fryer.
