ADDING SHORTENING Before placing shortening in tank, allow solid shortening to come to room temperature where the fryer is located for one to two hours to soften the shortening. CAUTION: Failure to remove crumb screens prior to addition of fresh solid shortening may cause fryer side walls to overheat, allowing shortening to reach flashpoint.
