3.1 Equipment Setup and Shutdown Procedures Setup DANGER Never operate the appliance with an empty frypot. The frypot must be filled to the fill line with water or oil before energizing the elements. Failure to do so will result in irreparable damage to the elements and may cause a fire. DANGER Remove all drops of water from the frypot before filling with oil. 3.3 Low Oil Volume Automatic Refill When the Low Oil Volume (LOV™) system is in place on the fryer, the frypot oil levels are continually checked and topped off as necessary from a reservoir in the cabinet. The reservoir holds a 35 pound box of oil. In a typical operation this will last approximately two days. Components of the system are annotated at the right (see Figure 1).
