YSCFC SERIES FLATBOTTOM GAS FRYERS CHAPTER 1: SERVICE PROCEDURES 1.1 Functional Description YSCFC Series Flatbottom gas fryers contain a welded steel frypot (mild steel) with heat-transfer ducting on the frypot bottom for efficient heating of oil without scorching. In the event that the fryer fails to properly control the oil temperature, the high-limit thermostat prevents the fryer from overheating to flash point. The high-limit thermostat acts as a normally closed power switch that opens when exposed to temperatures above 410°F [(210°C) - CE] to 450°F [(232°C) - Non-CE]. CE
