IX. OPERATIONAL GUIDELINES Please follow these simple guidelines for proper VPS operation: • The defrost timer must be set to the proper time of day. If the unit is shut down at any time, the clock must be reset. • Rail inserts must be in place (under pans) before loading any pans. • For best results in holding product temperatures, stainless steel pans should be used in the rail, rather than plastic pans. • The rail area must have a full complement of pans in place at all times.
